Beef and Bean Chili

Ingredients

  • ½ – 1 Italian Sausage (sweet/spicy), chopped into bite sized pieces
  • ½ lb Ground Beef
  • 1 large Onion, diced
  • 1 Jalapeño Pepper, diced
  • 1 Red Bell Pepper, diced
  • 3 Garlic Cloves, minced
  • 28 oz Chopped Tomatoes (1 can)
  • 15 oz Red or Black Kidney Beans (1 can)
  • ¾ cups Beef Stock
  • 1 can Tomato Paste
  • 2 tbsp Chili Powder or Cayenne
  • 2 tsp Ground Cumin
  • 1½ tbsp Brown Sugar
  • 1 tsp Dried Oregano

Instructions

  1. Prepare the vegetables: dice the onion and peppers; mince the garlic; drain and rinse beans.
  2. Cut the sausages into bite size pieces.
  3. Saute the onion and garlic in a pot on med-high heat. Once fragrant, cook the sausage, beef, bell pepper, and jalapeño.
  4. Add chili powder, ground cumin, brown sugar, and oregano. Mix well with the ingredients
  5. Add the tomato paste, beef stock, chopped tomatoes and beans.
  6. Reduce to medium heat and simmer until you reach the desired consistency.
