Beef and Bean Chili
Ingredients
- ½ – 1 Italian Sausage (sweet/spicy), chopped into bite sized pieces
- ½ lb Ground Beef
- 1 large Onion, diced
- 1 Jalapeño Pepper, diced
- 1 Red Bell Pepper, diced
- 3 Garlic Cloves, minced
- 28 oz Chopped Tomatoes (1 can)
- 15 oz Red or Black Kidney Beans (1 can)
- ¾ cups Beef Stock
- 1 can Tomato Paste
- 2 tbsp Chili Powder or Cayenne
- 2 tsp Ground Cumin
- 1½ tbsp Brown Sugar
- 1 tsp Dried Oregano
Instructions
- Prepare the vegetables: dice the onion and peppers; mince the garlic; drain and rinse beans.
- Cut the sausages into bite size pieces.
- Saute the onion and garlic in a pot on med-high heat. Once fragrant, cook the sausage, beef, bell pepper, and jalapeño.
- Add chili powder, ground cumin, brown sugar, and oregano. Mix well with the ingredients
- Add the tomato paste, beef stock, chopped tomatoes and beans.
- Reduce to medium heat and simmer until you reach the desired consistency.
