Namasu (Pickled Vegetables)

Ingredients

  • 1 Carrot
  • 1/3 Daikon
  • 120 g Vinegar
  • 90 g Sugar
  • 118 g Water
  • pinch Salt

Instructions

  1. Juliene the carrots and daikon until about 0.25cm thick.
  2. Sprinkle with a pinch of salt and set aside for about 10 minutes.
  3. Mix sugar, water and vinegar in a bowl, set aside.
  4. After 10 minutes, gently squeeze the excess liquid from carrots and daikon.
  5. Place into air tight container and add pickling mixture. Marinade overnight.
