Namasu (Pickled Vegetables)
Ingredients
- 1 Carrot
- 1/3 Daikon
- 120 g Vinegar
- 90 g Sugar
- 118 g Water
- pinch Salt
Instructions
- Juliene the carrots and daikon until about 0.25cm thick.
- Sprinkle with a pinch of salt and set aside for about 10 minutes.
- Mix sugar, water and vinegar in a bowl, set aside.
- After 10 minutes, gently squeeze the excess liquid from carrots and daikon.
- Place into air tight container and add pickling mixture. Marinade overnight.
